Place potato chunks in a medium saucepan. Add water to cover the potato chunks and then add 1 tsp. salt. Bring to a boil over high heat, then reduce heat to medium-low. Simmer, uncovered, until potatoes are tender, about 15 minutes. While potatoes are cooking, pour oat milk, olive oil and nutritional yeast into a measuring cup. Stir and set aside. When potatoes are tender, drain them, then return to medium-low heat and stir the potatoes for a minute or two to remove any residual cooking water. When potatoes seem dry and fluffy, slowly add the oat milk mixture (which can be heated for about 20 seconds in the microwave, if desired), stirring with a fork or whisk. Season to taste with salt and white pepper.
